Hey folks! It's dinner time, and I'm not sure what I want. But I have a container of Tofutti cream cheese (with chives) and I want to do something with it. I'm thinking like a base for a pasta sauce? I'm not sure. What are your favorite recipes that use cream cheez?

I'm new to this group as well as being a vegetarian. Since I began my journey as a vegetarian, I've been struggling with the idea of eating fish and seafood. I don't eat meat primarily for ethical reasons and fish farms fall into that unethical treatment thing that I'm trying to avoid. On the other hand, eating fish and seafood would make restaurant dining eating with my family much easier.
I guess I'm just looking for your opinions and whether or not some of you eat fish and seafood. I understand that at the end of the day it's my decision but I would appreciate some guidance.

If anyone is after a quick fruit cake that's simple for xmas then this is it !

I made this on monday, doubled the recipe worked perfect.
Ingridents
2 tsp egg replacer
4 tbsp water
1/4 cup vegan margarine
1/2 sugar
170g mixed fruit
1 1/4 cup of water or orange juice
1 3/4 cup flour
1tsp baking powder
1/2 tsp bi-carb soda
1 tsp all spice
Method:

I made this on monday, doubled the recipe worked perfect.

Method:
- Preheat over to 180 degess celcius
- Briefly whip the egg replacer in 4 tabs water until fluffy
- Place margarine, sugar, mixed fruit, whipped egg replacer & water/orange juice into a saucepan
- Bring to the boil and cool for 10 mins stirring occasionally
- Sift the flour, baking powder, bi-carb soda & all spice
- Mix in boiled mixture and transfer into a greased loaf tin or a greased 8inch diameter cake tin.
- Bake for 35-40mins
- Let cool in tin.

I posted this on the naturalbirth community and they suggested I join and post my question here. A little history on my family. My husband is a public high school teacher, I work casually (about 8 hours every two weeks) and otherwise consider myself to be a stay at home mom. We had our first child (waterbirth at home with our midwife) in September. She breastfeed and only receives expressed breastmilk when I am at work. No health concerns so far, we have a very happy and healthy baby girl :) We live in Michigan.
On to the questions:
So while this isn't birthing related.....I thought you ladies would have some great info for me or resources! I did check the tags and found information but was hoping for more :)
My daughter is 3 months old and hasn't had any immunizations/shots. My pediatrician isn't pressuring me in any way, but does recommend getting some shots, but suggested I do more research to make up my own mind. He said most of his resources are through medical journals and is working on a list for me to pick up next week. I read the Dr. Sears book but would like some additional reasources. I'm lucky to have a pedi who is very supportive of delayed shots and feels that it should be the parent's decision as to if any shots are administered.
He says I need to take into account that I am breastfeeding and that I am a stay at home mother as well.
My husband and I had originally planned on doing the delayed shot plan that is in the Dr. Sears book, but my pedi suggested not getting certain shots. I believe he only feels that polio and tetnus should be done (but I will have to double check as I wrote it down but have been doing a bunch of searching today!).
Any thoughts?

1 quart of Potato Peel Broth
2-3 bunches or broccoli, or one bag of frozen broccoli
1/2 gallon milk
1 small onion
pepper and salt to taste
Saute the onion in butter or olive oil. Add the potato peel broth and bring to a rolling boil. Add broccoli, boil broccoli in potato peel broth until soft, then add the milk. Boil down for 2-3 hours, season with pepper and salt to taste.

Hey, I hope someone can help. I am making some baked goods for my family for Christmas and my mom wanted Cranberry Walnut Bread but said she didn’t like the orange flavor that is usually in it. While searching, all I could find were recipes with orange so I was going to stick with the recipe in Veganomicon but it calls for 1/4 c orange juice & 1 Tbs orange zest. Has anyone else made this recipe and can say if it has a distinct orange flavor? Or I was finding that I could possibly use (soy)milk instead of orange juice but does anyone know how that would change the recipe, if at all and would I just omit the zest? Thanks in advance!

For dinner tonight I have a couple of cups of quinoa, a block of extra firm tofu that's been frozen and thawed, and a medium sized bag of frozen mixed veggies (carrots, corn, green beans) to work with.... and pretty much every seasoning and condiment readily available in a U.S. grocery store. How can I season/serve this to make it amazing? My brain just isn't working creatively on the food side of things this week.
There was a recipe posted here this week for butterscotch fudge and now I can't find it. Am I really dense or is it no longer posted? I was excited to try it for Christmas and ended up ordering the butterscotch chips for it. Can anybody help or am I s.o.l.?

This coming Saturday I am going to fly to Paris to visit with my dad for a week and a half (he's over there for work for a few months). He's pretty much a vegetarian, so he won't mind eating vegan for dinner, but I am going to be making it. His wife will also be there, and I am assuming that there will be plenty of underhanded snipes about my choice of diet.
So, I need some recipes or cookbooks that will be easy to make in Paristhat will just knock their socks off. So basically just whole foods that I will be able to easily find in a city that doesn't care too much for vegans. He has a stove and an oven and a fridge, but he doesn't want leftovers.

As a diabetic vegetarian, I greatly appreciate the thoughtful friends who have given me beautiful dry bean soup mixes in mason jars this year instead of the usual sugary treats. These are quick things I can put into the crock pot and don't require much work.
Unfortunately, a lot of the folks who make these are not people who eat bean soup on a regular basis. They don't realize that dry beans need to be rinsed after soaking to wash out gas-promoting residues, so they include the spices right in with the beans. The lovely spices will just get washed down the drain!
As it is, I have devised a solution in the form of a colander and a plate. The spices easily go through the holes onto the plate, but the dry beans stay put.

i checked the family and friends tag but didn't really see the same question. i feel like this has probably been talked about before but i thought i would bring it up because i'm unsure what tag it would be under.
i watched food inc. this morning with my dad and we got into a debate about the food industry. mostly agreeing that it is very corrupt and should be considered a monoply by the government but blahblahblah people working for the FDA, EPA, etc also work for the companies.
anyways. on the meat slaughter portions, i could barely watch and now he says he doesnt think he can eat meat for dinner tonight and doesnt get why i showed him that
what baffles me is that he can watch this, and it effects him for a few hours. but then tomorrow he'll go right back to eating meat. shouldn't seeing something like that effect you AT ALL? i have been not eating meat with him in the house for about 3 years now. i try to tell him my side of things and how disgusting it is and he agrees with me yet he doesn't want to make the change.
i always told myself i wouldnt be one of those people who shoves my animal rights beliefs on other people because, well, it can be annoying. but i'm constantly surrounded by this by people at school and my family. how they think its disgusting but they will just turn the other cheek and pretend it's not happening. i guess i just don't understand how someone can think one thing but do something completely different. thats whats turning our population and food to shit. the companies will have to supply what the people want. but the people cant seem to make the effort to change.
what are your opinions and thoughts on this? i guess mostly it was just a rant.

I found this article this morning on a link from the BBC news page. It's generally an article that uses the typical Christmas turkey as a segway into reasons for going veg*n. I found it fairly easy to understand (although the intro is somewhat preachy) and would recommend it to anybody who's looking for a good intro article for people they know.
